蒜香茄子

1、将鲜茄用清水洗净,切成约4厘米长、2厘米宽的长方块。

2、炒锅烧热后,倒入菜油,油烧热后,将茄子逐个放入锅中翻炒,再下入姜末、酱油、食盐、蒜瓣及清汤;

烧沸后,用文火焖1分钟,翻匀,撒入葱花。

3、再用白糖、淀粉25克(淀粉10克加水)调成芡,收汁和匀,加入味精,淋上香油,起锅装盘即成。
